The production of the wonderful pecorino garganico is the new experience that we wanted to live for you in an ancient farm of Gargano, after we made you discover how is made the more famous caciocavallo podolico of Gargano. This time we have chosen to discover this magic in one of the many farms between Vieste and Mattinata; prepare yourselves because you will be guests of our senses and we will nourish together with strong, authentic emotions. But without losing ourselves in other introduction words we begin to discover just how many emotions can give us the making of pecorino of Gargano.

At half past five in the morning we arrive at the farm; yes it’s very early but the life of the shepherds is a rough one even if according to them this is the best lifestyle they could have ever chosen. We walk around and in an incredible quite amid dusk and the breathtaking panorama we see the beautiful sheep that are still sleeping watched over by their loyal dogs. We get closer to them and we notice that they curiously open their eyes to see us but, after they understood that we represent no danger they return immediately in their world of dreams waiting for the shepherd that will lead them to pasture.

It’s a sweet silence what we can hear in this fresh and pure air of countryside; the song of the birds hidden between the branches of the ancient olive trees makes us company. But only in appearance is everything so peaceful, because the shepherds are already all of them awake and at work.

Taking another two steps we finally meet the lady of this wonderful farm that with a great kindness welcomes us and, like a grandmother with her grandchildren, tells us moments from her youth when, even then, she was making this fantastic pecorino of Gargano. This incredible lady is very joyful to have us around; we can see right away her wish of talking and she also decides to tell us some of her small secrets about the production of the wonderful pecorino garganico.

Inside the ancient and characteristic homestead where the magic of the making of pecorino of Gargano happens we notice straightaway in a cauldron made of cooper and tin the milk that her husband, the shepherd, milks from the sheep in the evening and also in the morning.

But look at this special lady going into action and between ancient work tools and woven baskets begins her creation. She tells us and also shows us that for making this delicious cheese she begins with warming the sheep milk to 36-38 degrees; after the temperature is reached and she turns off the fire, the rennet is added (only rennet of goat or lamb) and she waits until the milk curdles and transforms into curd. After we waited for about an hour, the milk was almost getting the consistency of a pudding; is really wonderful and, seeing that the lady with her immense kindness asks us if we want to taste, even if it’s really early in the morning we don’t say no to such an offer. What comes to our senses is an explosion of infinite sweetness, seems like a pudding of sweetened milk, truly unique friends…!

Proceeding with the making of our pecorino garganico between the stories lived in her youth by this fantastic lady and secrets of production, the cauldron with the curd is put again above the fire; meanwhile it begins to get warm with a typical wooden stick shaped like a mushroom, the old lady brakes the curd in pieces mixing it with the whey until it gets to 30 degrees. At this point with her experimented hands she tries to unite all the broken curd, takes out this dough, puts it into a woven basket and with her hands gives the shape to our pecorino of Gargano.

In this moment our pecorino is almost ready, in fact after leaving it a little in the basket to drain the whey, the old lady begins to sprinkle it with salt, fundamental ingredient for its long conservation and for its taste. After she salted it, the delicious pecorino of Gargano is ready for seasoning; it can be eaten fresh (after a few days from its production) or, as advised, aged up to one year; this fantastic work of art more is being aged more will give us a heavenly taste.

We arrived at the end of another wonderful experience on Gargano; if after you lived with us this incredible adventure you feel hungry we invite you with us and, with a tasty bruschetta made with bread of Gargano, extra virgin olive oil and pecorino slices and a good red wine from our land tasted in open air you will appreciate more the wonderful happiness that those little things give us, those simples and genuine.

Every place has its history; written in ancient sites covered by time and resuscitated by those who discovered them, today is a treasure chest and a heritage for all of us. They are fantastic places that take us back to the life of our ancestors and allow us to learn about them many truths. Of those fascinating places the Gargano is full; we wanted to live another exciting experience for you along an interesting archaeological itinerary on Gargano and, in a place where nature meets history to tell us how the years have passed and how changed the things over the centuries, we have visited the vast burial complex of the early Christian necropolis of Vieste, La Salata.

This archeological-naturalistic oasis immersed in the green of the Mediterranean maquis and defined by many archeologists as the most suggestive and majestic necropolis from the whole Mediterranean area, represents today one of the most important necropolis of this genre.

The early Christian necropolis of Vieste La Salata, dating from the III-IV century A.D. and probably also the graveyard of the ancient city of Merino is today the oldest evidence that we have of Christianity on the Gargano at that time. This fascinating necropolis divided in caves, is made of parietal niches (on the walls) and terrain niches (on the ground) and has more than 300 tombs sealed with slabs of clay similar to those found in Roman catacombs. There are also many small niches obviously used to deposit the ashes of the cremated.

Besides from being an important archeological site, the early Christian necropolis of Vieste La Salata, is also an important site from the geological, faunal and botanical points of view; here in fact we can admire in addition to the various brooks of karst and numerous fossils trapped in the rock, many species of birds and many varieties of plants like capers, aromatic plants of many types, watercress and many others. Is also possible to admire a beautiful lake, that connected with the sea through a torrent, give the oasis’s name to this incredible work of art.

In a place where the silence is the master, we remade for you a very important archeological itinerary on Gargano. The Umbra Forest, National Park of Gargano together with the wonderful woods of this territory are guests in the magical land of Gargano since the ancient times. In this land where the sea and the forest had always lived together in a perfect harmony one can admire natural marvels of a rare beauty. But if with the sea played with the wonderful coast on the “boundary” of Gargano digging the charming sea caves, at the center of this territory the nature played with its fantasy offering to all of us a true work of art, the Nemus Garganicum.

Now you are wondering what has to do this name with the Umbra Forest? Well friends, you must know that Nemus Garganicum is a very important name, in fact since the ‘800 this name represents the whole green lung of the Gargano that is Umbra Forest, Quarto wood and Spigno wood.

But why is it named Umbra Forest if you can find it on Gargano? Well for sure it has nothing to do with the homonymous Italian region if you were thinking about that; the name Umbra derives from the Latin and means “shadow”.

The Umbra Forest, today the National Park of Gargano is situated at a height of about 800 meters over the sea level and extends, silently and magical, between the cities of Vieste, Peschici, Monte Sant’Angelo, Vico del Gargano, up to Carpino. This with its charming beauty let the travelers to mix the blue holidays to Gargano with the wonderful green of the trees from the inland.

To live a fantastic experience inside the Umbra Forest, in some cases with the help of an experimented guide, we have many choices; trekking, orienteering and biking are just a few of the activities that can be practiced. Anyway, whatever our choice is the Umbra Forest is waiting for us with its marvels ready to be admired.

Like all the other experiences on Gargano that we spoke about and that you could have lived with us if you wanted, we decided to live for you this experience in Umbra Forest with the hope that through our emotions this walk into the forest will also become yours.

We start our walk beginning from the small settlement of Umbra village that is situated in the heart of the forest. This has for the travelers an important information center from where we can start out with many useful informations like maps with the paths and indications of the rest and picnic areas, useful informations about the flora and the fauna of the park and many others.

The small naturalistic museum situated in correspondence shows us the fauna and the flora of this forest and also shows us a model of Gargano at scale. Also in correspondence with Umbra village, across a wonderful path we discover how the ancient coalmen lived in a spectacular reconstruction; we visit their houses and get to know the ancient tools they used and even get to touch them. Getting out, we make a tour at the Giocabosco an area made especially for the little ones but also for those a bit bigger “including myself” that love feeling childish…:-D; that, in a fairy tale atmosphere, brings back the forgotten memories from when we were children. A fantastic idea for spending beautiful and exciting moments for you and for your children. In front of the Giocabosco we can admire another beautiful area destined for deer, fallow deer and moufflons and even feed those wonderful specimens with grains purchased from the museum. The entire village is really ideal for stimulating your interest and above all the interest of your kids.

Getting away from the village and proceeding with our route into the Umbra Forest we get to the wonderful lake, even this situated in the heart of this splendid marvel of nature. This beautiful artificial lake, filled with rainwater is home for many forms of life that we can easily observe simply by walking around it; in the lake we can see catfish of all sizes, goldfish, frogs, toads, wonderful turtles, and all kind of ducks quacking on the water.

Continuing our walk into the Umbra Forest we become increasingly aware of how impressive is the flora in this fascinating place. The trees are covering all the sky with their branches giving to this forest a feeling of enchanted forest. Waiting to see a fairy…:-D, we admire the impressive beech, oaks, cedars, chestnuts and birch trees that are around us; they really are many and all together form a tangled mash of braches that creates some wonderful nature’s drawings. More below, between the many green tones of the underbrush we admire various types of flowers like cyclamen and wonderful wild orchids.

Inside the Umbra Forest is a perfect equilibrium and harmony; between the sound of the wind that lets the trees speak, the song of the birds and the voice of the animals the emotions cannot be held.

Even the fauna of the Umbra Forest is impressive, rich of deer, garganic deer that is a native species, wild boars but also wild cats, foxes, wolves, hedgehogs, many reptiles and more others. And they couldn’t miss, the wonderful podolic cows; here, even if it’s not really their home because they are domestic animals, they graze calmly into the forest waiting for the hour when they return to the farms.

Between the cuckoo songs and the sound of the woodpeckers we are reaching the end of this brief but intense day in the nature. Because of its density, the time seems to run faster into the forest and the night gets here first..!

The mountain and the sea here on Gargano know themselves from millenniums; and if at first they were only neighbors, as the years passed by they became more and more friends so the mountain decided to give the sea a place to rest. Finding its natural shelter, the friend sea feeling in debt with the mountain wanted to give it a gift and decorated the beautiful cliff with true nature’s works of art that today makes this coast one of the marvels of our planet, we are speaking of the wonderful marine caves of Gargano.

These masterpieces of the sea with unique and charming shapes, are positioned in places where the crystalline sea and the cliff covered in green meet themselves showing their splendor to everyone. They seem paintings on this landscapes, with mysterious shades and a magical atmosphere that leaves everyone breathless. It is difficult to describe in words the beauty of Gargano’s sea caves like is difficult to understand why they have those weird names; but one thing is for sure, since they were discovered they fascinate the travelers from around the world.

But we are leaving now, on the board of a wooden boat to live this exciting experience between the sea and the wild nature travelling on the blue mirror of the Adriatic.

Every port of this territory is the ideal place for beginning our trip to the discovering of this wonderful sea caves of Gargano. We have chosen Vieste and at the board of a beautiful boat we began our exciting trip.

Wonderful sunshine rays are playing with the waves when we arrive at the first marvel, the cave of the Smugglers. Impressive this name, true? And yet behind a so particular name hides a one of a kind marvel. It is named like this because in the past some smugglers managed to get away exactly because of this cave structure that has two entries, one at south and the other at north.

After remaking the path of the smugglers…:-P we continue our experience discovering the cave Little Bell. Are you wondering why this name? Well we understood it only after we got in, in fact beside its incredible charm this wonderful cave looks very much like a church bell.

But we leave behind the bell and go towards another small piece of Paradise, this time a wonderful beach, we are talking about Baia di Campi. This beautiful beach immersed in the green of the nature calls us to discover its wonders also; its stones rounded by the sea invites us to take a break between olive trees and pines. Even the sea has a gift for us, in fact besides the beautiful island we can admire right in front of this bay, in these crystalline waters you can glimpse the profile of an ancient roman ship, a true memory of a passed time.

Leaving this wonderful bay, first of getting to the Capo Vieste cliff, named like this because is very similar to a human face profile and is the most exposed cliff into the Adriatic, we discover the cave Two Eyes. This, fantastic and mysterious like its name, for being literally “guarded into the eyes” must be explored inside. With a beautiful design on the walls created by the light filtrated through the green of the branches that covers it with care “maybe to protect it from the cold…J ” even this cave offers a breathtaking scenario. Admiring this perfect symbiosis between the sea and the nature through a so particular limestone wall gives a unique emotion that cannot be described in words, it can only be lived.

Another indescribable emotion is waiting at the next cave we explore. This cave knowing that its friend the sea loves playing with the rays of the sun decided to give it a gift; renounced at its roof to let the light enter so its friend can be even more happy; as you will see the plan succeeded. In fact in the Broken cave the sea is happy and, thanks to the light that comes in from the ceiling, is giving to the traveler a light blue-turquoise color and a clearness that gives a glimpse of the infinite. Emotional is little to say.

Continuing our exploration to the discovery of Gargano’s sea caves we encounter the fantastic Warm cave; yes you guessed!! It has this name because during the winter it has the water a bit warm. In fact, if we think a little, a home is meant to be warm, right? Well this is the home of the sea now…:-D. Some people calls this cave Violet cave. Inside the question that we all had was: but who painted this walls with this wonderful shades of violet? What can we answer if not that the fantasy of Mother Nature utilized in this land really has no limits..!! Totally amazing.

We leave the Warm cave and head towards another marvel of this fantastic experience, the cave of Tomatoes. The name is not for nothing but if you thought to take out your sandwich for lunch, well you’d better wait, in fact the “tomatoes” that are attacked to the wall are a marine species (not comestible).

Going out, with the charming Porto Greco Bay on one side and the blue horizon on the other side we continue our boat experience heading towards the Marble cave named like this thanks to its smooth walls that looks like marble. Separated with a slim tongue of limestone, next to this cave we found the cave of the Mermaids which owes its name to a legend. That tells us that inside lived the mermaids waiting for their beloved prey, the men.

Getting away of this fairy tale dream with mermaids our experience to the discovering of Gargano’s sea caves continues to the cave Two Rooms. This name is owed to the fact that it really has two rooms almost parallel which communicate one with the other through two small openings on the walls.

Admiring from distance the wonderful beach of Cala La Pergola we proceed with our experience towards new caves. We leave behind, for now, Cala La Pergola and the Two Rooms just to discover another marvel, the cave of Dreams. Mermaids, dreams, I think something fantastic must have been into these waters!!…:-D

The Palette cave, another spectacular masterpiece of nature, seems really the palette of an artist; in this simply wonderful cave is possible in fact to admire an impressive mix of natural colors, it is the moment to say we admire a true work of art.

Going out of this natural art gallery we continue our experience exploring the cave Big Bell, the greater sister of the Little Bell; the Snake cave owes its name to a peculiar shape similar to a cobra on a wall and the Emerald cave or Bats cave is named like this because of the high number of those little creatures that lived inside.

Going forward we find the Round cave that slightly reminds a snail and the Windows cave that doesn’t need so many explanations, its name tells everything. The last marine cave of the Gargano that we visit is Magic Eye cave; that gives us another enchanted magic, in fact inside it has a little beach, but not only. The cliff lets inside a small ray of light and that gives the water a color that almost hypnotize us with so much beauty. Well what can I say friends, a wonderful experience is little to say.

But now it is the time to go back; we return towards the port being charmed by the sunshine rays that are playing with the waves, that wind caresses our skin and still keeps us suspended between dream and reality. The emotions we lived are still strong but our souls begin already to think about our next experience in this fairy tale world that is the Gargano.

During your visit through the picturesque cities of Gargano you will surely run across traditional shops were are produced and sold the famous “orecchietteof Apulia. The question that now spontaneously rises in all of you is: but what is so different between these incredible “orecchiette” and those made industrially that can be found in every shop?

Well first of all I must say that beginning with their esthetic aspect there are many differences. The color for example, of that intense yellow from the durum wheat semolina that our women use, and the porosity of the pasta that for those that are handmade is more evident; but even the shape is different, in fact they have the gift of being diverse one of another, I always say that in their perfection are all a little imperfect; they are true pieces of art, these “orecchiette”. Than it is the love, the passion and that distinctive taste of the grain from our Tavoliere of Apulia; and after that it is the experience of our women, of our grandmothers, of our mothers, that with their marvelous skills are able to give life to these true masterpieces.

You should see these extraordinary women when they are at work; in their homes or in their little shops is always celebration time, a jubilation of smells and colors and a mix of emotions, between semolina that flies and perfume of traditions. There are strong, authentic emotions that you travelers should absolutely try during your experience on Gargano.

But now let’s leave the theory to pass for a while at the practice and let’s understand what ingredients you should use and see how is the procedure to realize at home the “orecchietteof Apulia.

Let’s begin with the ingredients:

400 gr. of durum wheat semolina (from Apulia plains if possible);

1 dl of warm water;

1 pinch of salt (according to your own taste)

Love, passion and so much patience

Once finished the ingredients list let’s proceed to the more complicated process of making them:

- pour on your working board the durum wheat semolina and the salt, create a hole in the middle, pour in the warm water a bit at a time and begin to knead;

- knead the pasta for ten minutes, being careful and using the lower part of your hand’s palm to knead, continue until in the interior will be formed tiny bubbles: you should obtain a rather firm and smooth pasta;

- once finished the kneading, cover the dough with a wet cloth; begin right away to divide it into pieces from which you will make strings with of the thickness of a pencil by rolling them on the floured surface of your working board; cut the string into pieces of about one centimeter.

- with the bold side of a knife press the pieces onto the working board in a way that the pasta curves and becomes similar to a shell;

- with your thumb press again the middle of every shell, helping yourself with the knife if necessary

- the result will be the “orecchiette” that must be placed side by side on a towel, a tray or directly on your working board;

- follow the same steps until you finish all the dough. My advice is to make this marvels a night before you cook them, to give them time to become slightly dried.

Once created these little jewels and finally arrived the time to cook them, according to you, respecting our tradition what dish could I recommend? Well yes, let’s cook the famous “orecchettewith green turnips, another marvel of our tradition.

Have you ever felt the emotion of seeing the trabucchi from Gargano alive? Do you know what a trabucco is? Hold on tight because together we will go to discover these ancient machines, we will understand how they work and we will discover their emotional magic, magic that here on Gargano is possible to live every day.

We begin by telling you that the word trabucco, today almost always associated with the ancient fishing technique, in reality in medieval times was a war machine, that was difficult to manage because of its great dimensions and its fixed location and was similar to a catapult.

As the time passed by, this word got a different meaning from the original one. Are you already thinking that where you will find trabucchi you will also find some battle fields!? Not at all; in fact, maybe because they are constructed with wooden piles or maybe because at the first impact they look like combat weapons, today the trabucchi for all of us are that spectacular human powered machines that are facing the infinite of the sea for searching fishes that pass by.

Once arrived at this point we can also link the Gargano to this story; because exactly in this land these ancient fishing machines, probably of Phoenician origins, are really many and we can easily find them. If I wouldn’t upload any photo and you wouldn’t have no clue about what a trabucco is, just by seeing one in Gargano you would immediately recognize it. Now imagine about what kind of rare beauty I am speaking of and what incredible experience you can have here with us…:-D

The trabucchi of Gargano, like some of the other trabucchi, are machines built at seashores over the rocks on robust wooden piles on which rests a wooden platform. From here, over the blue mirror of the sea, are extended two arms, also made of wood, that with their inexhaustible force sustain a fishing net.

How they work isn’t so complicated in fact the net is lowered into the sea by turning a winch, with the help of at least two men; the strategy of this ingenious way of fishing is to lower the net in an oblique position, that when the schools of fish pass by they manage to enter the net but cannot go throughout it. In that particular moment the able fishermen, that are always guarding from the height of their trabucco, by turning again the winch, at the contrary this time, will pull up the four corners of the net and catch the fishes.

When the trabucchi are put in motion the air fills with harmony; seeing a so ancient machine collaborating with the human power is an overwhelming emotion. These are a fundamental part of the artistic patrimony of Gargano and are protected by the Park.

The trabucchi of Gargano can be admired almost everywhere along the Gargano coastline; at Vieste for example, can be admired, among the many, the splendid trabucco of San Francesco, that is one of the ancients from all the Gargano, think that this one is managed directly by WWF; going through Peschici we can even find some transformed into small typical restaurants (fishing and meal time at the sunset). Friends, visiting Gargano you will really understand the importance of this exceptional instruments for this land and for this people.

Even when the sun goes to sleep, these trabucchi, with the help of lights placed in a way that put into value their beauty, will become real works of art in the open air and gives the traveler a breathtaking show. Among the many experiences that can be lived on Gargano, a really emotional experience is that of a wonderful boat trip to discover the Tremiti Islands.

Tremiti Islands, dubbed “the pearls of Gargano”, are an archipelago situated at about 12 nautical miles (about 22 km) from the continent.

These islands are a true nature Paradise, it’s enough to think that from six islands and small islands, only two are inhabited, San Domino and San Nicola, the other ones, Capraia, Pianosa, Cretaccio and La Vecchia doesn’t know the human intervention. When arriving on Gargano, among the first things that almost hypnotize the travelers are without doubt the secular olive trees. Imposing and wonderful, they have large twisted trunks with odd shapes, branches that almost touch the ground and evergreen leaves.

The beautiful thing that will strike you is that almost anytime, walking a little, it is possible to taste and acquire directly from the farms the famous caciocavallo podolico and why not even witness the production of this wonderful cheese.

You know, it’s almost impossible to see in other places herds of Podolic cattle at some steps away from you, with their rectilinear profile, characteristic horns and splendid grey mantle. When you are close enough they guard you with immense curiosity and even if they know that there is their territory and we are simple visitors, they let themselves be admired and give us, together with the green of the woods and the song of the birds, an almost supernatural contact with Mother Nature.

It will let you speechless the unforgettable living spectacle of this experience; an emotion that only in Gargano you can try. But let’s leave out all this for a moment and understand a little how this podolic cattle are raised and how the famous caciocavallo podolico is made. The raising method of these fantastic friends is free; the cattle are let free on the cliffs and mountains, where they eat exclusively wild herbs like rucola, borage, nettles, rosehip even hawthorn, carnelian, juniper and many others.

Another fantastic experience that this animal often makes us live is that of assisting of their, I call it “biologic schedule”; yes, you understood well my friends!! The cattle go grazing by themselves, every morning at the same hour and when the evening falls down, almost knowing what time is it, by themselves they return to the farm for reenter in their cribs and indulge themselves a little well deserved rest. An unique emotion, I guarantee..!

Speaking about the characteristics of Podolic cows, unfortunately they don’t offer a great qunatity of milk, and usually for making few caciocavallo cheese they use the milk from the whole herd. But the milk they offer is something exquisite, fatty and with a wild flavor from everything they eat. Exactly these characteristics make caciocavallo podolico a true delicacy; at its interior one can appreciate intense flavors and perfumes that will enchant you.

The production of caciocavallo podolico occurs through a variety of “artistic” heavy procedures. The shepherds that makes it are true artists and with their hands bring to life an unique and rare spectacle that you cannot miss.

In order to make the caciocavallo, first thing is to boil the milk and then the rennet is added (exclusively natural); the curd that is obtained, after the liquid from the pot is eliminated, is put into great ancient wood containers where it is left to rest where forms tall and round loaves. Once obtained the loaves, the shepherd with its never missing knife, begins to cut stripes of dough until is all finished. And here is where the difficult magic begins, and you will immediately find out why.

In an ancient wooden bowl, where first were put the stripes of dough, it’s poured boiling water; with an ability and unique resistance the skilled shepherd begins to work the dough, immersing it into boiling water with his bare hands and helping himself with a flat-faced stick begins to pull the dough making it homogenous and giving life to famous spun paste.

You should see them while this masters are at work, it’s an indescribable emotion. It’s like observing some great painter while painting his masterpiece. A spectacle..!

Once the dough is all made spun it begins the process of giving it the form. And look how another magic of our shepherd begins. With very complicated movements for us “the ordinary mortals” he brings to life the king of cheese form Gargano, the famous caciocavallo Podolico. Now our caciocavallo is ready to dive into the brine (a bowl with a highly concentration of salt) and spend a whole day in there.

Taken out from the brine, the caciocavallo is tied with a cord from its neck and it is let hanging in an environment with right temperature for all the time of its stage. Here it gets its famous shape. The crust of caciocavallo podolico, initially smooth and soft, gets hard with the pass of days protecting the famous cheese of atmospheric agents that otherwise would spoil it. The caciocavallo are like little babies for this shepherds, are their creation and they take care of them almost like they are their sons.

Almost always, these cheese are let to stage in the mountain farms where they can find the ideal air and temperature and so mature at their best; sometime they are even let in ancient deep underground wells. This method is much more ancient and the result will take your breath away.

The time of staging is minimum three months and goes up to three years or more; this gives caciocavallo an intense and complex flavor, with wild notes of herbs and smoke balanced by a sweet fruited retro taste; often it pinch the throat, this is the result of the wildish and natural diet of the cattles.

This is how caciocavallo podolico from Gargano is born, this is how is born a rare and mysterious cheese that from decades, in this land, unite and hold whole families. In this way the shepherds, thanks to the milk of this wonderful animal brings to life a true magic for your eyes and mouth.

This is the experience that I saw and I wanted to share with you today, that is the emotion that you can live, even with me if you want, visiting the Gargano.

We are living in a world always more technological where the people runs and goes in a hurry, busy with work and other million thoughts and with little time for themselves. We forget always more what it means having a moment of rest, a moment of peace to remember what is really important in life and for life. With this rhythms we often forget the enormous benefits of a regular life and a healthy diet full of genuine traditional products.

In the context of a frenetic life in which we all find ourselves today it is still a place that certainly is an exception, this place is called Gargano. Here people doesn’t seem to be influenced much by the changes of the world, this is place where time flows more slowly, a place of peace, of serenity, a place for cure the mind, body and soul.

Gargano is a place that keeps alive its customs and traditions, a place where everything has a different flavor, and speaking of flavors, here is present an exquisite traditional product, a product that is a symbol of everyday life, a religious symbol and that in the past was even a symbol of power; this product is the symbol of a territory where is always possible finding the taste of the past and the memory of an “ancient craft” capable of withstand any future battle. This excellent product is the bread.

Here, on Gargano like in major part of Puglia, the bread is unique and cannot be imitated in any other place of the world. Even if the main ingredients are more or less the same, here are more of two hundred bread types made from an impressive variety of grain types. The real secret of this land is that here still exists all the ingredients that are hard to find around like passion for tradition, the pure air that here has a different flavor and the great peace that this unique place knows to transmit.

The great respect for the hardly gained food that is still nourish the habitants of Gargano, it’s demonstrated even by the fact that in garganic cuisine almost never something is wasted; speaking about the bread, from the dough leftover after the main production, can be obtained others delicious traditional products like typical “raratura” from Rodi Garganico, pizzas or stuffed “focaccias”, “pettole” the famous “paposcia” from Vico del Gargano, “casatielli” and many others.

This are experiences that a traveler can have only here on Gargano maybe by touring through villages and lanes almost like taking a trip back into the time; Gargano is like this, as we told it, a fascinating place, rich of history, tradition and culture located in a unique landscape; a place that makes you be a little more childish and makes you forget, even for a short period of time, that we live in a world that has forgotten what it means to live!
